- This may not be an authentic Caesar Salad since it doesn't use Romaine, but the
- leaf lettuce tastes better. My parents spent a year working on this recipe.

- Dad's Caesar Salad

- 1. Tear and wash 2-3 heads red and/or green leaf lettuce, then spin or drain
- off excess water.

- 2. Mix in large salad bowl:
- 1 egg
- 1 tsp olive oil
- 2 pinches dried dill weed
- 1 clove garlic, crushed or minced
- 4 dashes Worcestershire sauce
- 1 Tbsp red wine vinegar
- 2 Tbsp lemon juice
- Freshly ground pepper to taste

- 3. Add grated parmesan and/or romano cheese, mixing with fork, until dressing
- is thick enough to cling together. Adjust flavors and consistency using
- oil, lemon juice and grated cheese as needed.

- 4. Toss dressing with greens, adding sliced mushrooms, croutons, chives and
- other extras as desired. Serve immediately. (If you want to prepare ahead
- of time, mix up dressing and store in fridge. Toss with lettuce just
- before serving.)
